When former NMSU Men’s Basketball Coach Marvin Menzies and wife Tammy moved to Las Vegas last year for his new position, they wished they could have taken their Las Cruces home with them. “It took us quite a while to find a home in Vegas because we were looking for something that compared to this home,” Tammy explains. The Menzies first came upon their dream home when it was featured in the annual Showcase of Homes. Tammy remembers loving the openness of it and she immediately saw its potential for hosting large groups. And host they did. Over the years, Tammy and Marvin held gatherings of almost 250 people in the home. “It’s set up so nice for entertaining both indoors and out,” Tammy says. “There’s a beautiful view and we’d set the yard up real nice with tables and chairs, turn on the waterfall, the surround sound, and the colored lights in the pool. We’ve even set up a stage and had live bands. That’s how big the outdoor space is.”
The kitchen is just as conducive to pleasing a crowd with a fully-stocked wet bar area and tons of counter space for lining up dishes of food buffet-style. For catered events, the adjacent laundry room was used for storing equipment and trays out of sight.
For parties or just family, both Tammy and Marvin love to cook. She says the kitchen is ideal for the home chef with plenty of extras and amenities such as pull out spice racks on each side of the stove, a steamer, double ovens, and a “to-die-for” built-in coffee system for cappuccinos and espressos. Whether they were making deep fried turkey, fish, or gumbo (Tammy has Creole roots), she says the space is ultra-functional, “easy to cook in, and just as easy to clean and maintain.”
When all the cooking, cleaning, and hosting duties were done, the Menzies had a pretty spectacular master suite to retire to. Not only does the space have its own separate washer and dryer, it boasts plenty of other relaxation amenities from the steam shower to the built-in television above the bathtub. Tammy says, “It’s a really fantastic home. They didn’t spare anything on the details.”
Ninety-nine percent of the time, Tammy and Marvin cook from taste, without a recipe. Yet, exclusively for Neighbors magazine, Tammy graciously wrote down the recipe that has long been a surefire hit at their holiday parties. She says, “My family is from New Orleans and Marvin’s family is from Guyana, so we love spicy food. This dish is known to a lot of households, but not in the way I make them, this is a New Orlean’s take on deviled eggs.”
New Orlean’s Deviled Eggs
• 1 dozen hard boiled eggs
• 1 can (4.25 oz.) of Underwood
• Deviled ham spread
• ¼ cup mayonnaise
• ½ cup dill pickle relish
• 1 tbsp. cayenne red pepper
• 1 tbsp. black pepper
• 1 pinch of salt (optional)
• 4 tbsp. Louisiana hot sauce
1.Boil the eggs in salted water. Once cooked, let cool to room temperature before peeling.
2. Cut the peeled eggs in half lengthwise and remove the yolks. Rest the egg whites on a serving platter.
3. Mash egg yolks into a fine crumble. Mix in the deviled ham spread until the mixture is a spread.
4. Add in the dill pickle relish, black pepper, cayenne pepper, and Louisiana hot sauce and pinch of salt if needed. Mix in the mayonnaise. The mixture should look like a spread, not loose but not dry. Add more cayenne pepper and/or hot sauce to your taste.
5. Spoon or pipe egg mixture from a pastry bag into reserved egg whites. Garnish with paprika on top. Enjoy!

Two Kitchens to Love

Contemporary touches, like a metal roof, make the overall design eclectic, but there’s plenty of Southwestern-influence speaking to the history of the home, particularly in the casita which boasts a wooden plank ceiling with cedar beams and a 14-foot rock hearth surrounding the fireplace.
“More than the house, it’s the surroundings that make this property special,” the homeowner adds. “I’ve enjoyed just sitting on the screened in porch drinking coffee and looking out at all the green. There’s just something so comfortable and peaceful about it.”

A nice neighborhood and spacious living areas drew Margaret DeLuna and her husband to this property tucked away in the North Valley. When they first moved in, they immediately gave the home a facelift, changing out the dated carpet for wood floors, adding custom tilework, and painting in a New Mexican-inspired color scheme with light teal and rustic red accents. “I like how bright, open, and airy it is,” Margaret explains. “I like the great big windows that look out over the pool and the landscaping. Plus, it stays cool in the summer and it’s very easy to clean and keep clean.”
Margaret, who enjoys gardening, both inside and out, says much of her time in the home is spent either growing and harvesting food in the backyard, or canning and cooking that food in the kitchen. “I’m always shuffling between the outside and the kitchen,” she says. “I grow peppers, cucumbers, and squash and can them. I also like to bake. I’ve lived in a lot of different houses over the years, some larger than this one, and I would say by far, this is the most workable layout I’ve ever had.”
The stovetop, refrigerator, and sink are laid out in an ideal working triangle, while plenty of countertop space means Margaret can lay out all her ingredients and tools for easy cooking. When entertaining, the DeLunas spread out food among the two bar tops, allowing traffic to flow easily in and out of the dining and living areas and often out onto the back porch. A second, alfresco cooking and dining area sits beneath a gazebo overlooking the pool.
Before all the baking and gardening starts for the day, Margaret says she and her husband walk the mile-long loop around their tranquil neighborhood every morning. “This is a very safe and clean place to live. We walk right out our door and don’t even have to find a walking trail or anything. We see other neighbors and say hello. It’s just a very friendly place to be.”
Margaret learned the art of canning from her mother. While they’ve mastered the tedious process of canning with boiling pots of water and tongs, she says they were delighted to discover this couldn’t-be-simpler method. Margaret adds, “I love this recipe as I can pick from my garden (or the Farmer’s Market!) and can as I go with whatever is in season and ready at the time. I pick fresh cucumbers or squash and can a jar or two and when more are ready to pick and repeat the process.”
Easy Refrigerator Pickled Veggies
Measurements are to make a jar at a time. For larger batches, pour all ingredients except veggies into stovetop pan and heat. Multiply ingredients times the number of jars you will fill.
• Fresh cucumbers, squash, peppers or other veggies, sliced
• Clean pint-size Ball canning jars with new lids
• Glass measuring cup
• Distilled white vinegar-1 cup per jar
• 2 tbsp. white balsamic raspberry blush vinegar (Alessi brand)
• ¼ tsp. salt
• ½ tsp. yellow mustard seed
• ¼ tsp. celery seed
• 1 tsp sugar
(Optional: 1 tsp. minced garlic, chopped onion to taste)
1. While slicing veggies, run clean jars and lids through rinse and dry cycle in your dishwasher.
2. Pack sliced veggies directly into warm jars.
3. Place all other ingredients (vinegars and seasonings) into glass measuring cup and heat in microwave approximately 1 ½ minutes or until almost boiling. Repeat process for each jar.
4. Pour heated vinegar directly over packed veggies, place lids securely on jars. Shake gently to mix.
5. Allow jars to cool and store in refrigerator. Will be ready to serve in 2-3 days! Store up to 3-4 months in the refrigerator.

In 2003, when Kim Yexra and her husband were in the market for a new home, a friend introduced them to the work of builders Wayne and Kiki Suggs of Classic New Mexico Homes. “Every good thing we heard about them we found to be true,” Kim says. “Wayne and Kiki’s passion and attention to detail are superb. They build every home as if it’s their own.”
While Classic New Mexico Homes is perhaps most well-known for authentic Pueblo-style builds, Kim envisioned something with a little more Mediterranean flair. Wayne and Kiki happily obliged, incorporating lots of rock and stone both inside and out, and foregoing the traditional adobe-style exterior in favor of a more Tuscan-inspired design.
Custom architectural details and amenities can be found throughout the stunning home, from the jaw-dropping outdoor living spaces to the stacked stone columns and fireplace hearth gracing the indoor living area. But for the Yexra family, the home centers “hands down around the kitchen. Everyone congregates in the kitchen,” Kim notes.

Kim says, “We didn’t have any window treatments in the dining room or kitchen because of those views.” Square, wooden beams and brickwork on the ceiling—as well as some impressive brickwork on the range hood—create those special touches that are Classic New Mexico Homes’ signature.
Beyond aesthetics, Kim points out that the kitchen is a “chef’s dream with all the bells and whistles.” Some of her favorite features include the over stove pot-filler, the double ovens, the extra sink, and an abundance of countertop work space. She adds that the beverage fridge is ideal for entertaining and that, during football parties, guests seem to congregate around the smaller kitchen television instead of the much bigger screen in the living room. There’s also plenty of space for seating large groups—they’ve hosted almost 30 people with room to spare—and Kim says she couldn’t do without the extra storage tucked under the bar seating area.
“We’ve done a lot of grilling and all the traditional holiday turkey dinners,” Kim remembers. “It’s a breeze with the double ovens. Baking brownies and cookies is easy with so much space. We make lots of pasta and it’s Simple Simon with the pot-filler. It’s truly a joy to cook in.”
